An alcohol free version suitable for all ages is also included.

Summer here in northern Michigan doesn’t fully begin until the arrival cherry season. Our climate is just perfect for growing juicy cherries! Michigan harvests over 90,000 pounds of cherries each year, most of which is grown here Up North. In fact, we’re known as the Cherry Capital of the World! So it only makes sense that my #summerdessertsweek offerings feature the sweet fruit that my home is famous for. Once the harvest begins, I buy fresh cherries at just about every farm stand that I come across. Then I spend the ensuing weeks finding ways to work cherries into recipes so that we enjoy every last bite of summer.
Fresh cherries compliment the best foods, both sweet and savory.
Of course my all time favorite cherry application is My Favorite Cherry Pie, but the Roast Chicken with Cherry Balsamic Glaze is a close second. Oh! Or maybe my Cherry Chipotle Hot Fudge Sauce? Another favorite cherry recipe is this Cherry Lime Bellini. Because bubbles!
A Bellini is a simple cocktail of champagne with juice–traditionally of the peach variety. I decided to change things up a bit and use cherry sorbet in place of juice for an icy cold summery version. Then, THEN! I made a non-alcoholic variety with sparkling grape juice for the under 21 crowd. Then I went and made a “skinny” non-alcoholic version with LaCroix because apparently I have no will power when it comes to bubbly drinks. Bubbly Drinks for Life, man!
No matter how you choose make them, just make them! Cherry Lime Bellini are a refreshing little sipper that’s bursting with the fresh taste of summer Up North. It’s the official dessert drink of summer. You heard it here first, Friends.

Ingredients
- ½ C. cherry sorbet or sherbet
- 4 oz. chilled champagne (or sparkling apple juice or lemon lime soda)
- Wedge of fresh lime, for garnish
- Fresh sweet cherry, for garnish
- Granulated sugar, for garnish
Instructions
- Lightly run a fresh wedge of lime around the rim of cocktail glass. Twist the edge of the dampened rim of the glass through a plate of granulated sugar to coat. Refrigerate the glass aside to allow for the sugared rim to dry.
- Place two small scoops of cherry sorbet into the chilled glass. Gently pour champagne or sparkling apple juice into the glass. Garnish with the lime wedge and a fresh cherry.
Notes
This recipe easily scales up to serve a crowd! For easier entertaining, I recommend portioning the sorbet ahead of time.Simply place individual scoops on a parchment lined baking sheet and freeze until ready to serve. The recipe is equally delicious when made with sparkling apple juice or lemon lime soda in place of the champagne, for an alcohol-free version suitable for people of all ages.
