Weekly Menu Plan 146 is full of quick and easy weeknight dinners, along with two decadent desserts to sweeten the weekend.
In my opinion, the Dinner Diva’s Weekly Menu Plans are delicious, but this week? This week is double delicious because all of the recipes are easy enough for a weeknight, but special enough for weekend company. And speaking of the weekend–we’re throwing in a couple of fab desserts to sweeten the deal–just because we love y’all more than butter!

My girl Erin/The Speckled Palate kicks off the week with her very Monday-friendly Slow Cooker Chicken Tortellini Soup. It couldn’t be easier! All you do is toss everything but the pasta into the slow cooker, and then toss in the tortellini 15 minutes before serving. That’s just the kind of easy, comforting kind of recipe that I love to start out the week. I like this one paired with a good chopped salad.
Tuesday is just as tasty with Cheryl/Pook’s Pantry’s Curry Shrimp with Coconut Milk that’s served over sweet potato noodles. If you don’t have a spiralizer, look for sweet potato “noodles” in the refrigerated section of the produce department or deli. This pairs beautifully with a simple cucumber ribbon salad.
I bring us through the midweek slump with my 15 Minute Weeknight Pasta. I love it because you can toss just about anything in it and it’ll be delicious. It’s great when you have a few veggies languishing in the fridge in need of a home.
Thursday is a low-carb lovers dream with Jenni/Pastry Chef Online’s Cajun Chicken Sausage and Cauliflower Rice. She uses Aidell’s chicken sausage, which I ADORE because their stuff is all natural, gluten free, and free of nitrites.
Erin bookends the week with her tantalizing Turkey and Spinach Meatball Subs. Just look at all of that saucy goodness! I like that she uses lean turkey and sneaks in a few extra vitamins with the spinach. Take these subs to the next level by serving them on homemade Italian Herb and Cheese Buns.
The weekend is definitely sweeter with Cheryl’s Vanilla Cupcakes with Strawberry Cream Cheese Frosting. The soft cupcakes are perfectly complimented with the super-strawberry infused frosting. She uses freeze dried strawberries to make the flavor vibrant. The frosting alone is good enough to eat with a spoon!
Might I also suggest a slice of my Chocolate Cream French Silk Pie? My go-to all butter pie crust is the perfect vehicle for the simple, homemade chocolate pudding filling with freshly whipped cream. My boys can’t get enough of this pie! Try it and find out why.
