Spring has finally sprung here on the 45th Parallel, just in time for the holiday weekend. Memorial Day is upon us, thus kicking off the barbecue frenzy that is summer. While y’all know that I’m all about the food, let’s not forget to honor our brave men and women that have sacrificed all. Pray for our first responders and military personnel who’ve been lost in the line of duty. Watch a Memorial Day ceremony or parade in your town. Thank members of our military, police, and fire departments past and present for their service. Then invite some of them over to share a meal in gratitude. Erin/The Speckled Palate kicks off the holiday with a deconstructed twist on a staple with her Cheeseburger Kebabs. All of the components of a cheeseburger on a stick! There’s nothing more fun than serving (and eating!) food on a stick. Serve the kebabs with my lightened up Dill Potato Salad and wait for the complements to roll in.
Cheryl/Pook’s Pantry brings on the flavor with her Lamb Burgers on Tuesday. The warmly spiced meat is perfectly accessorized with a super easy yogurt-tahini sauce. Serve these fab burgers with my Greek Quinoa Salad to carry the flavors throughout the entire meal.
I share a crowd favorite recipe on Wednesday with my Grilled Chicken or Steak Fajitas. The marinade does double duty because it works well with both chicken and steak, so you choose the protein! Of course, layering the succulent meat and sweet roasted peppers in my homemade flour tortillas is highly encouraged.
Once again, Jenni/Pastry Chef Online lives up to her Smash Burger Queen title this week with her BBQ Bacon Smashed Burgers. If it rains, have no fear because these are done on a hot skillet, so no grill is necessary. My fluffy, seasoned baked potato wedges go nicely with the crisp edges of the smashed burger.
Whole 30, Paleo, Gluten Free, and Dairy Free friends will rejoice because Erin’s Orange Steak Salad is all of these things and 100% delicious. I’d like enjoy this salad out on the deck while sipping a cherry lime bellini.
When you want to take it easy with dessert, try Cheryl’s No Bake Cherry Cheesecake Bars. They come together in a jiffy, and can be made well ahead of time, so you can spend more time chatting over dinner.
