Weekly Menu Plan Week 72 is full of summery goodness with a pepper jelly topped burger, an herbaceous pork roulade, a fab Reuben, and All of the Fruity salads and dessert! You’re not going to want to miss this delicious week!
I can’t believe that we’re on the cusp of September already! WHERE HAS MY SUMMER GONE? Sorry to shout, but I’m just not ready for fall. The days are already shorter here on the 45th parallel. Gone are the nights of nearly 10:00 p.m. sunsets. It’s starting to get dusky at dinner time, once again. I even had to don a sweatshirt at a soccer game one evening this week. Le sigh.
I’m committing to wearing flip flops for as long as possible to keep that summer feeling going. I figure that ought to keep the cooler weather at bay, right? (Please insert comforting lies here.)
If there’s one thing that I can count on is the Dinner Divas serving up another great meal plan line up for the Weekly Dinner Plan Week 72. Take a look:
Cheryl/Pook’s Pantry keeps the grill warm with her Bacon Goat Cheeseburger with Pepper Jelly on Monday. It’s a juicy beef burger topped with goat cheese, crisp bacon, and a kick of pepper jelly. ’nuff said. Try it with my crisp and fluffy Baked Potato Wedges and you’ll be happy that you did.
I get a little fancy-ish on Tuesday with my Rosemary Pesto Pork Roulade. I pound out a pork tenderloin and stuff it with spinach, tart apples, and smoked Gouda cheese. Then I roll it, tie it, and smother it with fresh rosemary pesto before roasting. It may look a little complicated for a weeknight, but I assure you that it comes together quickly. Plus it’s super delicious, so there’s that. A Simple (Egg-Free) Caesar Salad nicely rounds out the meal.
On Wednesday, Jenni/Pastry Chef Online brings it huge with her Smashed Reuben Burger. Think of a really great smash burger meshing with a scrumptious Reuben. We’re talking a juicy beef burger smashed and seared so it’s got those coveted crispy edges. Then top the whole affair with thinly sliced corned beef, ‘kraut, and fresh Russian dressing. Yeah. She went there. I recommend my Spicy Baked Sweet Potato Fries on the side for this one.
Erin/The Speckled Palate balances out the week with a protein-rich Summer Quinoa Salad. This dinner salad uses the grain quinoa as a base. Quinoa is a complete protein in and of itself, but Erin adds chicken, avocado, tomatoes, and feta cheese to amp up the nutrition. Topped with a homemade lemon vinaigrette, this is one salad that will fill you up and keep you going.
Now when it comes to watermelon salads, I’ve always been partial to my Watermelon Cucumber Salad with Feta and Mint. However, I’m seriously crushing on Sara/My Imperfect Kitchen’s Spicy Watermelon Salad because it’s not only full of watermelon, but also jicama, tomatoes, pepitas, micro greens, and so much more! This salad has so much stuff in it that there’s something for everyone included.
Cheryl’s right there with me, hanging on to summer flavors with her Vanilla Cupcakes with Strawberry Cream Cheese Frosting. The smooth vanilla cupcakes are the perfect compliment to the intensely strawberry frosting. I’m a huge fan!
I’m using the last bit of summer’s juicy raspberries in my White Chocolate Raspberry Scones. Dudes. You totally want one of these alongside your weekend coffee while watching the sunrise. Or sunset if you’re like me and not a morning person. You do you. Just make the scones because the tangy raspberries are the perfect match for the creamy white chocolate chunks in these sweet and buttery scones.
