The first time I was invited to dinner with my future in-laws, I was asked to bring a dessert. Since my MIL worked at a bakery, I found it odd at the time. She later told me the dirty little secret of larger bakeries is that they do very little actual baking. She called it more of a thawing/proofing/frosting operation. Who knew?
In any case, I was nervous to meet Bacon Slayer’s parents wearing more than a sports bra and shorts after rollerblading. Yes, I first met my future in-laws after rollerblading for miles on a hot summer day. Did I mention that my love neglected to tell me that we had parked in front of his parents house before hitting the trail? Yeah.
That wasn’t absolutely horrifying or anything. It’s a good thing that man of mine is cute.
Given my sweaty, inappropriately-dressed-to-meet-the-parents state of our initial meeting, I was determined to bring an impressive dessert that would all but erase the first impression image of me from their minds. Call it a Redemption Dessert of sorts.
I wanted to make a dessert that had them so enamored with decadence that they’d only remember the fact that their son was dating an excellent baker–not a stinky girl with mascara smeared under her eyes and visible sweat stains on her athletic wear.

Thankfully, I spotted this recipe on either the package of cream cheese or the Oreo cookie crust that I’d purchased as a starting point for dessert. I scribbled down a few changes and when to work.

Ingredients
- For the Cheesecake:
- 1 (6 oz.) prepared Oreo cookie pie crust
- 1 lb. (16 oz.) cream cheese, softened (NOT fat-free)
- ½ C. vanilla sugar (or substitute granulated sugar)
- ½ tsp. vanilla extract
- 2 eggs
- 4 oz. bittersweet baking chocolate, melted and cooled
- For Serving:
- 1 pint fresh raspberries
- Whipped Cream, to taste
Instructions
- Preheat the oven to 350 degrees F.
- Beat cream cheese with sugar and vanilla until light and fluffy. Add the eggs, one at a time, mixing until just incorporated. Set all but 1 cup of the vanilla cheesecake batter aside.
- Blend 1 cup of the batter with the melted chocolate in a small bowl until combined. Spoon the chocolate batter into the prepared cookie crust, leveling it with the back of the spoon. Pour the reserved vanilla cheesecake batter over the chocolate batter. Use a clean spoon to level the batter to the edges of the pie crust.
- Bake for 40 minutes or until the center of the batter is almost set, but still wiggles a little bit when jostled. Transfer the cheesecake to a wire rack to cool. Once cool, refrigerate the cheesecake for 2 to 3 hours or until well chilled and firm.
- Serve Chocolate Layer Cheesecake with fresh raspberries and whipped cream, as desired.
