How it came to be the end of summer and time to get back to school is beyond me. I feel as if summer vacation began a mere five minutes ago, and yet here we are…Back to School. It’s not as if I haven’t had sufficient warning. I mean, the Back to School displays started popping up in stores around the July 4th holiday. Being a homeschool family, I’m able to conveniently ignore such displays until the last possible second–usually when I’m organizing all of our curriculum for the new school year and realize that we’re out of pencils. Then I might ponder aloud the mystery of how on earth we could have gone through 250 pencils in the past year. A musing quickly followed by the usual panic of, “Oh no! School’s starting! What in the world are we going to eat for breakfast every day?!”
While I’m all for a hot breakfast of cornmeal buttermilk waffles or melt in your mouth chocolate chip pancakes, the truth of the matter is that I don’t often have the time to make a big breakfast on school days. Homeschool or not, I learned long ago the we are all more focused and ready to learn after a healthy breakfast. A fact backed up by studies showing that kids that eat a nourishing breakfast do better in school, and are more likely to make better food choices throughout the rest of the day.
I also learned long ago that the secret to making the best tasting, creamiest steel cut oats is to cook them with plenty of milk. Oats made with milk products are velvety on the tongue. Steel cut oats pack loads of extra vitamins, and have extra staying power over those made with water alone.

Ingredients
- 1 ¼ C. Steel Cut Oats
- 2 C. 2% Milk
- ½ C. Half & Half
- 2 C. Water
- 2 C. Tart Apple, peeled and grated
- ¼ C. Light Brown Sugar
- ½ tsp. Cinnamon
- 1 Tbs. Unsalted Butter, for buttering the crock
Instructions
- Lightly butter the crock of a slow cooker. Pour the steel cut oats, milk, half & half, and water into the buttered crock. Give it all a quick stir before adding the grated apple, brown sugar, and cinnamon.
- Gently stir everything in the crock together to distribute the ingredients. Cover the crock and cook on the LOW setting for 6 to 8 hours.
- Stir the oats well before serving. Serve with additional milk or a splash of cream.
