Rice Krispies Treats Birds Nests are the perfect sweet treat for Easter. An adorably delicious combination of rice krispie treats and Cadbury mini eggs. Sweet marshmallow crispy treats decorated to resemble tiny birds’ nests. Resting on a thin bed of chocolate, the nests are sprinkled with colored coconut and adorned with milk chocolate Cadbury Mini Eggs.

I’m going to be honest here, Friends. I cannot wait for Valentine’s Day to be over with each year! I’m not against celebrating love, pink hearts, glittery cards, or even cutesy little cherubic archers. I love my family. Love glitter. pink. and hearts. What’s not to love about celebrating LOVE? Not a thing! Except for the fact that the milk chocolate Cadbury Mini Eggs won’t hit retail shelves until after all of that Valentine candy is cleared away.

I seriously can not get enough of those little eggs! I bought my first two bags of the season on February 16th. By February 18th, I went back by the store to pick up a few more bags because somehow, some way, the initial bags were completely empty! I’m positive that there were candy coated chocolates inside of those bags when I bought them, but I can’t be sure.

Does chocolate evaporate when exposed to air? I only ask because I don’t have any other explanation as to how 20 ounces of chocolate candies can disappear in just two days. All I remember is that I opened a bag to share a few candies with my boys. Later that night, I tucked them into bed before sitting down with a DVR full of Sherlock episodes and the intent of editing photos while simultaneously getting my Benedict Cumberbatch fix. That’s where things get a little fuzzy. After editing approximately 37,241 photos, the next thing I know..BAM! Both bags were empty.

So…

I’m not going to admit that I single-handedly demolished two huge bags of dreamy chocolate eggs. But, I pretty much single-handedly demolished two huge bags of dreamy chocolate eggs.

There. I said it. I OWNED IT!

Because if there’s one thing that is even more addictive than the mini eggs, it’s Rice Krispie treats. Combine both of those with a little more chocolate and a touch of coconut, and they make the sweetest little birds nest cookies. I can’t think of a more adorable centerpiece for Easter than these cookies because nests signify renewal through new life, just like Easter.

Bird’s nests are a sure sign that Spring is near – a season that I’m increasingly convinced might just skip the 45th Parallel region all together.  So when in doubt, I make my own bird’s nests! It makes me feel better. And slightly warmer. Plus there’s chocolate involved, so all’s right with the world.

Cadbury Rice Krispies Treats Bird’s Nests

Ingredients

• 2 C. semi sweet chocolate chips
• ½ C. sweetened coconut flakes
• 2 to 3 drops green food coloring
• 3 Tbs. unsalted butter
• 16 oz. vanilla marshmallows (about 40 large)
• 6 C. Crispy Rice cereal (such as Rice Krispies brand)
• Pinch of Salt
• 5 oz. milk chocolate Cadbury Mini Eggs (1/2 package)

Instructions

1. Lightly grease 24 wells of a muffin pan with butter or baking spray; set aside. Alternately, the wells of the pans can be lined with cupcake wrappers, and then sprayed with cooking spray.
2. Place the chocolate chips into a microwave safe bowl. Melt the chocolate in the microwave by heating on full power in 30 second bursts, stirring in between, until completely melted and smooth. Evenly distribute the melted chocolate in the prepared muffin pans to thinly coat the bottom of each well by about ¼-inch. Allow the chocolate to rest until it is mostly set, but still a little tacky to the touch.
3. While the chocolate is resting, stir the coconut flakes with a few drops of green food coloring in a small bowl until it is uniformly colored; set the coconut aside.
4. Pour the Cadbury Mini Eggs into another small bowl, sorting to remove any broken eggs. Consider the broken eggs a bonus snack for making the treats. Set the bowl next to the colored coconut, ready for assembling the cookies.
5. Melt the butter with the marshmallows in a large saucepan set over medium heat, stirring constantly. Once the marshmallows are melted and smooth, rapidly stir in the crispy rice cereal to coat.
6. The rest of the process must be done quickly in order for all of the ingredients to stick together to form individual nests, rather than separate layers. Use a buttered scoop to portion the hot crispy rice/marshmallow mixture over the firm chocolate in the prepared muffin cups. Once distributed, use a piece of parchment paper that has been sprayed with baking spray, or slightly buttered hands to levelly compress the crispy rice/marshmallow mixture in each cup. Sprinkle the colored coconut over each cookie, gently pressing to adhere. Arrange two or three mini eggs on top of the coconut, again gently pressing to adhere.
7. Let cookies stand until completely cooled. Once the cookies have cooled, run a thin paring knife around the edges of the cookies to loosen them, also using the knife to lift them out of the pan. Cookies may be stored in an airtight container at room temperature for up to 2 days.
