Weekly Menu Plan 147 serves up deliciously easy and satisfying dinners all week, along with a couple of seriously decadent desserts.
Welcome to another delicious week, my friends! The Dinner Divas are at it again with the Weekly Menu Plan 147. On deck this week are a multitude of gorgeous, easy, and delicious dinners, along with two chocolate infused desserts. Take a look at what’s coming to the table this week:
I start the week on Monday with my Hasselback Stuffed Chicken. It may look all weekend-fancy-pants-ish, but believe me when I tell you, this is an easy weeknight dinner that will start the week off right! Tender chicken is stuffed with marinated artichoke hearts, tangy sundried tomatoes, and plenty of cheese. This one is a crowd favorite at our house! Try it and see why.
My girl Jenni/Pastry Chef Online carries the winner-winner-chicken-dinner theme through to Tuesday with her Chicken with Mushrooms and Thyme. If you love mushrooms and chicken, these succulent chicken thighs are where it’s at.
Erin/The Speckled Palate’s shakes things up a bit on Wednesday with her beautifully golden Seared Scallops with Raspberry Gastrique. A gastrique is just a light sauce made from a simple reduction of sugar and vinegar that can be infused with just about anything. Erin infuses hers with ripe raspberries and it is a very, very good thing. I think this would be extra lovely served next to an egg-free caesar salad.
Thursday brings all the comfort of soup with Cheryl’s Slow Cooker Lentil Soup with Ham. I love a really great lentil stew, and this one is no exception. Lentils are full of essential vitamins, minerals and protein. They make for a thick and rich soup when paired with plenty of vegetables and herbs. This is a good meal prep soup to have on hand for easy lunches throughout the week.
After a long week, I want something easy, fast, and delicious. That’s why I’m closing out the work week with a hearty, speedy Broccoli Bacon Carbonara. A carbonara is a simple sauce with egg, smoky pork, and cheese that comes together in barely more time than it takes to cook the pasta. I add a healthy amount of broccoli to round out the meal in a single bowl.
I don’t know about you, but even here Up North where it’s currently 24 degrees F, it’s still ice cream weather year ’round. Jenni’s No Churn Junior Mint Ice Cream is definitely a favorite. Creamy chocolate mint ice cream studded with gooey Junior Mints candies. The entire affair takes all of FIVE minutes to prepare. I mean, COME ON! This is the perfect treat for a relaxing night of Netflix this weekend.
If you find yourself with a little more time on your hands, Erin’s Dark Chocolate Souffles are ready for the oven in about 20 minutes. Then it’s a mere 15 minutes until dark chocolate decadence is yours. Now that’s the way to celebrate the weekend!
