Weekly Menu Plan 143 kicks up the comfort with lighter dinners to warm you heart and soul. We’re talking soups, a vegan option, carnitas, and so much more!
This is shaping up to be one delicious week, my friends! The Dinner Divas are helping you (mostly) keep your New Year’s resolutions this week with warm and comforting dinners that are a tad lighter, but every bit warm and comforting. Take a look:
I serve up my Lighter Chicken Stroganoff on Monday. It’s got all of the scrumptious flavor of the traditional beef version, but with a few less calories. My family adores this recipe and they don’t like much that has multiple foods touching each other. That’s a win in my book!
On Tuesday, Jenni/Pastry Chef Online makes our lives easier with her simple Instant Pot Carnitas. Nestle that juicy meat in homemade flour tortillas, over a bed of rice, a dinner salad–you get the idea. This is one versatile recipe that easily morphs into many different meals.
On Wednesday, Erin/The Speckled Palate shows us her Texas roots with her easy Shiner Bock Chili. This chili stays true to Texas with ground beef, chile en adobo and a well loved Texas lager–Shiner Bock! Don’t you dare serve this chili without the best ever corn muffins alongside it. Just don’t 😉
On Thursday, Cheryl/Pook’s Pantry helps us all feel a little better with what she calls “a big bowl of sunshine!” In reality, it’s a winter vegetable soup that’s loaded with root vegetables, chickpeas, couscous, and turmeric which is what gives it that cheery yellow hue. I think a slice of no knead herb batter bread will nicely compliment the soup.
The liquid comfort continues on Friday with my Lighter Loaded Baked Potato Soup. Substituting fat free plain Greek yogurt in place of sour cream, as well as a few other changes, helps to ease up on the calories of this hearty soup.
Holy WOW is all I can say about Jenni’s Coffee Maple Bacon Popcorn Breakfast Treats. You read that right! Jenni advocates eating these sweet and savory treats for BREAKFAST! With the maple, bacon, and a touch of coffee, she insists that it’s practically like eating pancakes. Who am I to argue with that logic? Heck, why not throw in a few strips of candied maple bacon to really sweeten the deal?
Erin brings us a fruity adult sipper for weekend indulgence with her Blizzard Cranberry Bourbon Cocktail. Q: What’s a good cocktail without a good appetizer? A: Just a drink. How about a few of these cheesy asparagus spirals to go with and make it a cocktail party?
