Back in the infancy of this here blog, I shared a step by step tutorial on how to cook bacon in the oven. I’ll be honest–the photos are absolutely hideous. I’m 100% sure that I took the photos with my Blackberry with exactly zero natural light. Then I popped them up on the internet for all to see in their straight-out-of-the-camera glory.
My how things have changed.
Those old photos may have little to be desired, however the cooking method is sound. So sound that I bake bacon in this manner to this day.
While my photography skills have improved in the past eight years, so has my recipe for baking bacon. I still appreciate cooking all of the bacon at once without having grease splattering all over the entire kitchen. I also appreciate adding additional flavor to the crispy bacon. These days, I like to candy my bacon with real maple syrup and brown sugar. Then I might finish it off with a touch of freshly cracked black pepper to balance the sweet and salty flavor profile.
Trust me. It works.
It works so well, in fact, that Candied Maple Bacon is my family’s bacon of choice. The Sons love a few strips alongside easy overnight waffles or mixed berry baked french toast. I like a slab of candied maple bacon (or two) on top of a really great burger. And my Bacon Slayer? Well, he doesn’t much care how I serve candied maple bacon, just that I do.
I sure am a lucky woman to have married such a smart man.

Ingredients
- 1lb. thick cut bacon
- ¼ C. light brown sugar
- 2 Tbs. rice vinegar (do not substitute another variety of vinegar)
- 2 Tbs. pure maple syrup
- ½ tsp. freshly cracked black pepper, optional
Instructions
- Preheat the oven to 350 degrees F. Place a wire cooling rack onto a rimmed half sheet pan.
- Whisk the brown sugar with the vinegar and maple syrup to combine.
- Arrange the bacon onto the wire rack so that pieces do not overlap. Two half sheet pans with racks may be required, depending on the size of the bacon slices. Bake the bacon for 10 minutes.
- Turn the bacon over and continue baking for an additional 10 minutes. Turn the bacon again, and baste the top with syrup mixture. Return to the oven and bake for 5 more minutes. Flip the bacon over and baste the other side with the syrup mixture. Return the bacon to the oven and bake for an additional 5 minutes or until bacon is done to the preferred level of crispness. Sprinkle the candied bacon with freshly cracked pepper, if desired.
