Am I the one that needs to eat a wide variety of foods to be happy? I’ve always been this way, but now I’m more so since I’ve been tracking my macros for the past 7 months or so. Weekly Menu Plan 82 has a ton of variety to keep me content and satisfied. I think you will be too.
Let’s have a look:
Monday is a breeze with Jenni/Pastry Chef Online’s Smoky Beef Carnitas made in the Instant Pot. Do you have an Instant Pot? I highly recommend procuring one! That little appliance does it all in the fraction of the time, making these carnitas taste like they slow braised all day.
Tuesday brings about a classic chowder from Erin/Speckled Palate. Her Bob’s Bacon Potato Clam Chowder is so delicious! A bowl of this chowder will be fabulous with one of my Apple Cheddar Bacon Scones along side it.
I’m loving the golden crust on Cheryl/Pook’s Pantry’s Brown Sugar Bourbon Salmon. This dish is full of sweet flavor, omega-3’s, and a slight crisp on top. I think this will be tasty with a simple Cucumber Ribbon Salad.
Thursday brings my Minestrone Vegetable Soup to the table. Loads of vegetables, tender beans, and a smidgen of parmesan make this healthy soup a real winner. Try it with a slice of No Knead Herb Batter Bread.
For a change of pace, try Jamie/Life’s a Feast’s Greek-Style Chicken with Preserved Lemons and Olives. Preserved lemons add such a nice, concentrated lemon flavor. Yes, please!
I loves me some apple cider, so I’m giddy at the thought of Cheryl’s Apple Cider Bourbon Cocktail. She’s got a bourbon theme going this week, and I’m okay with that.
Since the holidays are right around the corner, I’m sharing a method for Freezing Pies to Bake Later. This is a total game-changer, Friends! Make pies when you have time. Freeze the pies in freezer and oven safe pie plates. Bake the pies straight out of the freezer on the day that you want to serve them. Boom! Dessert is served.
