Weekly Menu Plan 81 has so many tasty options that it’s hard to know what to make first! The menu plan this week is full of the warm, comforting goodness of soups, vegan delights, vegetable infusions, a fab date night dinner, and tasty nibbles to tide you over until dinner time.

One of my favorite comforts in soup form is a good tortilla soup. My girl Erin/Speckled Palate makes a mean Turkey Tortilla Soup that’s a real winner. It’s also a fantastic way to repurpose leftover turkey, so make it now, and file it away for to make away after Thanksgiving.
Cheryl/Pook’s Pantry proves that vegetables can be comfort food with her vegetarian Veggie Cakes. I have it on good authority that these are super tasty. Try eating them with a soft fried egg for a balanced meal.
I amp up the cozy factor with my Creamy Onion Soup, inspired by my serving days at Outback Steakhouse. This rich, creamy soup with tender onions is delicious! I like it with a handful (or two) of oyster crackers. Of course, a heel of crusty bread on the side is never amiss.
Also not amiss is Jenni/Pastry Chef Online’s Easy Spicy Vegan Chickpea Chili. She uses store bought hummus and fresh salsa for this stick-to-your-ribs soup. The leftovers are great wrapped in a homemade flour tortilla.
My friend Jamie/Life’s a Feast rounds out the Weekly Menu Plan 81 with her Clams in White Wine. Simple, flavorful, and oozing Date Night charm. Make this one to make Friday special before grabbing the vanilla caramel corn for a good night of Netflix.
