Weekly Menu Plan Week 12 is all about fresh ingredients coming together into hearty summer salads for dinner. Easy preparation is the key ingredient!
Well, hey there Friends! Sorry that I’ve been MIA this week. The family and I took a wonderful vacation last week along the Pictured Rocks National Lakeshore. Upon our return, we had company for several days for the July 4th holiday and the National Cherry Festival. Such goes the summer when you live in one of the most beautiful places in the midwest.
For those of you whom follow me on Instagram, you likely saw some vacation photos in my Instagram Stories feed. If not, what are you waiting for? All the real life happenings are over in IG Stories. I plan to share more about our vacation soon, but for now, how about a few of my favorite photos from the trip?
I met a new friend outside of a pasty (meat pie) shop. He’s not much for photos, so I was happy that he agreed to pose with me.
A tree with massive roots washed up along the shores of Lake Superior, which I stumbled across on one of my runs. Just another reminder of how the power of nature in God’s creation always has a way of humbling me when I least expect it.
We also walked along, over, and under many, many waterfalls. I swear that if we were independently wealthy, we could easily vacation most of the time. So many adventures await!
I promise to get back in the kitchen to create more new recipes in the coming days. Until then, let’s get to the Weekly Menu Plan Week 12, shall we?
Ease into Monday with a super easy Thai Chicken Salad with Spicy Chili Lime Dressing from Cheryl/Pook’s Pantry. A food processor makes quick work of loads of fresh vegetables. A store bought rotisserie chicken eliminates the need to heat up the house. The spicy Chili Lime Dressing brings a little zip to the whole affair. Believe me when I tell you that the photo doesn’t do this dinner justice. This is one salad that is not to be missed!
I bring my very popular Chef Salad in a Jar to the table on Tuesday night. These salads are easy to assemble and stay fresh and crisp for days in the refrigerator. Chef Salad in a Jar is also a great meal prep option for a healthy, balanced lunch throughout the week.
Jenni/Online Pastry Chef brings serves up a vintage favorite with her Mom Style Macaroni Salad. She gives you basic ingredients and the freedom with which to experiment to your hearts content to make a new classic macaroni salad that it bound to be a family favorite.
Another great dinner turned meal prep option is this delicious Spicy Chicken and Avocado Salad from Susan/Girl in the Little Red Kitchen. She uses a high quality bagged salad as the base. Grilling up extra spice rubbed chicken makes it easy to make multiple salads throughout the week. Healthy dinner and extra for lunches? Yes, please!
The Grilled Pork and Pineapple Salad from Sarah/Chef Next Door is another time saving salad that utilizes pre-marinated pork that grills up tender and juicy every time. The bed of greens, heirloom tomatoes, and fresh pineapple make this a salad that is bound to be a new family staple.
If in case you have a favorite chicken recipe marinating in the refrigerator, serving this Green Goddess Potato Salad alongside it would not be amiss. Tender multi-colored fingerling potatoes tossed in a light yogurt sauce with plenty of fresh herbs make this one flavorful side dish.
How about a fresh and fruity dessert that doesn’t require turning on the oven? Jenni’s Cherry Blueberry Slump does just that because it’s made on the stove top. What’s a “slump,” you ask? Think of a simple fruit cobbler-style dessert with sweetened fruit topped with sweet biscuits or batter that steam on the stove top. Whatever you call it, just call me when it’s ready to eat!
