Weekly Menu Plan Week 7 is full of healthy, delicious dinners like Mediterranean chicken bowls, tasty gyros, a unique pizza, steak & potato salad, shrimp pasta, roasted cauliflower, and cupcakes that you won’t want to miss!
Ooo-weee! Can you believe it’s already June? With June comes the longer, (hopefully) sunny days that make me want to take full advantage of every minute of sunlight for as long as possible. I’d like to say that I spend every night lounging by the pool or at the beach, but more than likely, I’m cramming more DIY projects into the daylight hours. Do you do this too? Try to fill every minute of daylight while you can?
It’s not all work and no play, though. Son #4 is obsessed with me bouncing on the trampoline with him while he does flips that make me want to shriek and avert my eyes. I see a lot of trampoline time in my future. And extra TUMS to ease my nerves from watching my babiest-baby flinging his little body all over the place while shrieking, “Watch this, Mom! (flip, flip, flip) Did you see me?!”
Mom-ing boys isn’t for wimps, that’s for sure.
Regardless of what we’re doing on these longer summer nights, dinner has to be quick, easy, and satisfying. The Weekly Menu Plan Week 7 brings all that and more to the table.
Let’s kick off the week with Cheryl/Pook’s Pantry’s Mediterranean Chicken Bowls. Tender chicken, loads of veggies, and roasted chickpeas for a “nutty” chew with a tahini dressing that is to die for! Better yet, this is a “Meal Prep” recipe, so you can make lunch for the entire week in one fell swoop. How cool is that?
I bring an easy Grilled Chicken Gyros recipe to the table on Tuesday. Perfectly seasoned grilled chicken piled high with tomatoes, purple onion, and my absolute favorite tzatziki sauce on the planet, all rolled in soft pita bread. Wednesday brings Jenni/Pastry Chef Online’s Shortcut Vegan Lahmajoun. I read that title and thought, “lah-ma-what?!” Turns out lahmajoun is another name for Armenian flatbread. Traditionally, lamajoun is topped with minced lamb or beef. Jenni opts with plant-based protein with hers and slathers it with spicy hummus with vegetables. She calls it a cheeseless pizza. I don’t care what she calls it, as long as she calls me for dinner!
By the way…it’s been killing me not to use a grandpa joke like that since we started these weekly menu plans. Be glad that I made it seven weeks before unleashing that corn-ball joke.
Ho-lee-mo-lee! I’m looking forward to Thursday this week like you can’t believe! That’s because Susan/Girl in the Little Red Kitchen is serving up this fab-yoo-las looking Steak and Potato Salad with Avocado, Corn, and Tomatoes. The fresh basil vinaigrette really seals the deal. I mean, just looking at the photo is making my mouth water. This is another recipe that makes plenty enough to save some for lunch the next day. Talk about exciting leftovers!
With Friday comes a super easy dinner that feels extra fancy. Sarah/Chef Next Door shares her Shrimp Scampi with Linguine for a delicious dinner that comes together in minutes. Garlicky, butter pasta with shrimp is worthy of a special occasion–even if the special occasion is merely surviving the work week.
If you’re looking for an extra flavorful side dish this week, Cheryl has you covered with her Curried Cauliflower with Golden Raisins. Roasting brings out the sweetness in the cauliflower, while curry and ginger kick up the spice. I plan to make this recipe for…you guessed it…lunch!
Every week deserves to be capped off with a little something sweet. My Strawberry Lemonade Cupcakes with fresh Strawberry Buttercream have so much fruit in them that they’re practically a health food! At least that’s what I tell myself when I’m going back for my second cupcake. The tangy lemonade cake is perfectly complimented by the sweet strawberry frosting. I bet you can’t eat just one!
