Wow! It’s hard to believe that we’re already on the Weekly Menu Plan for Week 5! I hope that you are enjoying the ease of menu planning with a variety of delicious recipes from top bloggers curated in one convenient location. I know that I sure am! This week brings five savory dinner choices, along with TWO desserts. Because let’s be honest…one dessert is never enough after a long work week, amiright?
Let’s take a look at this week’s mouthwatering options, shall we?
My friend Susan-Girl in the Little Red Kitchen eases us into Monday with her Pasta with Asparagus and Ramp Pesto. This dish screams, “Hello, it’s SPRINGtime!” in every bite. Seeing as we’ve been having 40 degree temperature fluctuations within hours on the same afternoon, I’m thankful for the reminder.
The meatless theme carries through into Tuesday with The Wimpy Vegetarian’s Crispy Mexican Black Bean Burgers. Susan and I share a “beef” (pun intended) with veggie burgers in that they don’t resemble a burger in either flavor or texture. I mean, call it what you want, but if it’s got the texture of mashed potatoes, it most certainly isn’t a burger. Susan solves this issue by loading up the Tex-Mex flavor profile, and creating a black bean burger with crisp edges and a crumbly texture, just like the real deal.
Holy WOW! Sarah/Chef Next Door brings a nutrient-rich powerhouse with her Healthy Loaded Sweet Potatoes. These sweeties are full of kale, dried cranberries, feta cheese, and a little crunch to keep things interesting. The recipe is easily scaled up to make a one dish meal that the whole family will enjoy.
Thursdays are usually when I’m tempted to go off the rails on the weekly menu plan. By then, I’m already exhausted from the week, and I have ride out two more days until the weekend. That’s precisely why I feature flavorful Greek Turkey Sliders with Feta Garlic Sauce on Thursday. With all that well seasoned lean turkey, spinach, roasted red peppers, there’s no way I’ll cave and order pizza and miss this dinner. Besides, that feta garlic sauce is EVERYTHING, y’all!
Jenni/Pastry Chef Online continues the healthy eating vibe of the week with her Low Carb Cajun Style Sausage with Cauliflower Rice. I tell you what, if you haven’t tried cauliflower rice yet, you are missing out! The vegetable loaded dish is also gluten free, so it’s perfect to serve to company with gluten sensitivities. Or just to friends that are fans of delicious flavor.
Someone please tell me that you understand the Psych reference!
I freely admit that a little sugar keeps my happy and sane. In the interest of transparency, I should mention that I get a little cranky if there’s no dessert at the the end of the week. It’s a good thing that my kindred-baker-friend Sarah feels the same way. Her Lemon Cheesecake with Shortbread Crust is just the sweet something that I need as a reward for surviving the week with my sanity in tact.
My girl Cheryl/Pook’s Pantry understands that some week’s require two desserts because, yes. You’ve been just that good. Her No Bake Lemon Blueberry Cheesecake Parfaits are practically a health food because they’re lower in sugar and low carb treats. Any dessert that doesn’t equal a full day’s worth of calories is all right with me.
