I grew up watching I Dream of Jeannie and The Jetsons in syndication on t.v. I was absolutely fascinated by how Jeannie could cross her arms and nod her ponytail and poof! A five course dinner was on the table. Jane Jetson need only press a few buttons in her space-age kitchen to have a roast beef with all the trimmings magically appear on a platter. She also had that sassy robot named Rosie to do all of the household chores. Can you even imagine how easy daily life would be if someone/something else took care of the cooking and chores? So. Cool. I daydream about being able to sit down at the end of the day and put my feet up and read a book while Rosie the Robot vacuums or pushes a few buttons to whip up a tasty meal in a flash.
Well, I’m not Jeannie, and I don’t have a sassy robot housekeeper. Now sassy boys that sometimes do chores? I’ve got a small herd of those! They’re learning, but it takes consistent reminding on my part to get anything done, which is a lot of work in itself. That leaves me to be the primary delegator, cook, and housekeeper. I’d practically run to volunteer to put up with all the sass in the world if it meant that someone else did my laundry or cooked dinner for a day.
At the end of the day, I’m too whipped to think, let alone pull off something miraculous to feed 5 men of various sizes. Planning family meals in advance is the only way we ever eat real food on a regular basis. I plan a menu, then I follow the plan. Until a night when I planned to grill a steak and a small monsoon blew through right about dinner time, so I was forced to either 1) don Deadliest Catch style rain gear to grill anyway, or 2) improvise something brilliant on the fly and hope that it’s edible.
I chose the second option.
Such was the case the other night. Although I’m passionate about cooking from scratch, I’m not up for the extra prep when the menu plan falls apart. These are the nights that I appreciate having a good shortcut in the pantry–especially if that shortcut is made from few ingredients. Stubb’s Anytime Sauces are a new pantry staple in my kitchen. They pack a lot of flavor and are versatile enough to use as a marinade, basting sauce, or dip. I feel good about buying Stubb’s brand because they get their flavors from real ingredients. They don’t include any artificial flavors, colors or sweeteners, or high fructose corn syrup.
So I grabbed a bottle of marinade from the pantry. What would have been steak and veggie kebabs morphed into a delicious Southwest Steak Stir Fry.
I marinated whisper thin slices of certified Angus beef in a cup of Stubb’s Green Chile Anytime Sauce. Green Chile Anytime Sauce is a mix of Hatch green chiles, garlic, and lime that gives a bit of southwest flair to meats. I’m in serious love with the flavor of this sauce! I’m constantly dreaming of reasons to spoon it over just about everything. So far, I’ve discovered that it’s excellent drizzled over omelettes, roasted black bean tacos, and slow cooker shredded chicken tacos. Since I’ve been experimenting with using spice rubs on vegetables lately, I sprinkled Stubb’s Bar-B-Q Spice Rub over the cut vegetables. I really enjoy the smokey spice imparted by the Stubb’s rub.
Once the former-kebabs were well marinated and seasoned, I simply stir fried the lot of them in a skillet. After it cooked, I took the whole delicious mess and served it over rice. Oh, man…was it ever good! Hooray for cooking on the fly!

Ingredients
- For Stir Fry:
- 1 ½ lbs. bottom round steak
- 1 lb. (6 C.) chopped fresh broccoli, carrots, and sweet bell pepper
- 12 oz. Stubb’s Green Chile Anytime Sauce, divided
- ½ - ¾ tsp. Stubb’s Bar-B-Q Spice Rub, to taste
- 1 Tbs. light olive oil
- For Serving:
- 4 C. hot cooked brown rice, divided
- Salsa, to taste
- Guacamole, to taste
- Shredded Cheddar Cheese, to taste
- Plain Greek Yogurt or Sour Cream, to taste
Instructions
- Thinly slice the steak against the grain. Place the steak along with 1 cup of Stubb’s Green Chile Anytime Sauce into a gallon size zippered food storage bag. Seal the bag and shake the steak inside to coat with sauce. Marinate the steak while preparing the rest of the stir fry ingredients.
- Chop the desired vegetables into bite sized pieces. Season the vegetables with Stubb’s Bar-B-Q Spice Rub, to taste.
- Drizzle olive oil into a hot skillet set over medium heat. Stir fry the vegetables for 5 minutes or until just beginning to soften. Transfer the vegetables to a bowl while attending to the steak.
- Use tongs to transfer the marinated steak to the skillet. Discard the remaining marinade in the bag. Stir fry the steak for 3 to 4 minutes or until cooked to your liking. Add the vegetables back to the skillet to warm during the final minute of cooking the steak.
- Serve Southwest Steak Stir Fry over hot cooked brown rice with an additional drizzle of Stubb’s Green Chile Anytime Sauce and desired toppings.
