Weekly Menu Plan – Week 1 serves a whole lot of deliciousness in such fresh, easy to prepare dishes as one pot spinach pasta, chicken bahn mi rice bowl, skillet pork marsala, smashed beets with goat cheese dressing, chicken fajita lunch bowls, crispy black bean burritos, and a summer salad with roasted apple vinaigrette. YUM!
This week I’m kicking-off a little something new, with the help of my friends. I’m collaborating with a few of my favorite bloggers to serve up a week’s worth of dinner ideas! Here’s how works: I’ll post a new Weekly Meal Plan every Friday morning. (Comfortably Domestic Email Subscriber’s will get it delivered directly to their email box!) The menus consist of 5 delicious dinners, with 2 “extras.” The extras might be a tempting appetizer or side dish, a decadent dessert, a thirst quenching beverage, etc.
All Weekly Menu Plans will feature (mostly) healthy, seasonal foods, that don’t take all day to prepare. Having the meal plan delivered to your inbox on Friday morning is so convenient. It gives you plenty of time to shop and get organized for the week ahead. I hope that the Weekly Menu Plan makes life a little easier, while inspiring you to cook simple, delicious food. One Pot Chicken and Spinach Pasta with Creamy Sun-Dried Tomato Sauce from Cheryl/Pook’s Pantry. Holy wow! Seasoned chicken, tender spinach, garlic, shallots, plenty of parmesan, and sun-dried tomatoes in a creamy sauce? With only one pot to wash? Sign. Me. Up.
Skillet Pork Marsala with Roasted Asparagus from Sarah/The Chef Next Door Blog. Another one pot meal made with all natural pork, mushrooms, and onions in a mixture of chicken stock and Marsala wine. A fun twist on the classic Chicken Marsala!
I’m all about a whole mess of deliciousness piled into a bowl. (My Chicken Burrito Bowls are a great example of this trend). But this? THIS Chicken Bahn Mi Rice Bowl from Susan/Girl in the Little Red Kitchen is All That with a wedge of lime! Loaded with Vietnamese flavored chicken, zucchini, pickled vegetables and rice – this is one meal so full of flavor that it’s calling your name!
I’m bringing Crispy Black Bean Burritos to the dinner table to help us edge closer to the weekend in style. Crispy Black Bean Burritos combine black beans with sautéed vegetables, brown rice, and cheddar cheese for a healthy, balanced vegetarian meal with complete proteins, all wrapped up in a toasted tortilla.
Pook’s Pantry’s back on Friday to help you make a week’s worth of healthy lunches in about an hour. These Low Carb Chicken Fajita Lunch Bowls rest grilled chicken atop a bed of leafy greens with corn, avocado, onions, tomato, cheese, and a little zip of lime. Yes, please!
Pastry Chef Online reminds us that salads are anything but boring afterthoughts with her Summer Salad with Roasted Apple Vinaigrette. Roasted apple vinaigrette, y’all! If the dressing alone doesn’t draw you in, then perhaps the aged cheddar and “bacon” almonds on a bed of fresh spring mix will seal the deal. Thanks for the tasty reminder, Jenni!
Not to be outdone, Susan/The Wimpy Vegetarian rounds out the menu with Smashed Roasted Beets with Goat Cheese Dressing. I’m pretty sure that I could make an entire meal of this sassy side dish.
