Long before I became a mother, I’d heard the phrases, “Enjoy it while you can! It goes by fast!” Usually I was the subject of those comments made to my parents. Comments alluding to the fact that I’d be grown before they knew it. I didn’t really understand exactly what people meant by those well-intended comments. I mean, sure I understood the theory of time passing–I just didn’t see it as a that big of a deal because everything that I’d ever dreamed about couldn’t happen until I was older. At the time, I was impatient to become older so that I could do all of the cool things that older people did.
Yesterday afternoon brought forth a rite of passage at the Comfortably Domestic house. Before the polar vortex hits in earnest, Bacon Slayer thought it was time to teach Son #1 the finer points of running our snow thrower. This is monumental for a few reasons:
- I now have not one, but two very capable guys in line before me to clear the snow.
- My oldest baby is now old enough to be trusted to work heavy machinery.
- Oh, and I have two very capable guys in line before me to clear the snow!
I mean, come on! Just look at that beast! That’s one big, scary machine that has a habit of dragging me down the driveway. I don’t wuss out and pull the Girl Card very often. However, I’m not too proud to enthusiastically wave that sucker in the air when it gets me out of using The Beast.
Bacon Slayer patiently detailed Son #1 the sequence of requisite instructions to get The Beast started without flooding the engine, how to clear the chute without losing an appendage, clutch-blah-blah-blah-gears, and how to shut it off. Maybe I jumped into the fray periodically to write helpful reminders directly on the housing with a black Sharpie, lest my boy forget. I wasn’t smothering him! I was just looking out for his appendages.
As I stood back trying not to hover and watching my boy take it all in, I got it. I fully understood all of those comments about time passing. I am the older one. My first baby is a young man. He’s not much shorter than his father. His feet are now larger than mine. I can feel his sense of pride and accomplishment when he takes on the responsibilities of a man. I look into his eyes and understand the concept of time fleeting uncontrollably past when all I want it to do was stand still. Stop even.
In the absence of a TARDIS, my only option is to hang on and enjoy the ride. My boys are going to be grown and gone before I know it.
You know what else is happening before I know it? The holiday season. (How’s that for a segue?) With all of the pot lucks, parties, and family gatherings happening in the next few weeks, having an arsenal of easy, scrumptious appetizer recipes is an absolute must. Southwest Cheddar Chicken Spread is a family favorite via Bonus Mom. The original recipe is pretty basic and good in it’s own right. I like to jazz it up with some southwest flavors to give it a little more oomph!

Ingredients
- For the Spread:
- 3/4 C. plain mayonnaise
- 8 oz. cream cheese, softened
- 4 oz. can chopped green chilies, drained
- ½ tsp. kosher salt
- ¼ tsp. chili powder
- ¼ tsp. ground cumin
- ¼ tsp. garlic powder (not garlic salt)
- 1 ½ C. sharp cheddar cheese, freshly grated, divided
- ¾ lb. chicken breast, roasted and shredded
- For Serving:
- Sturdy crackers, pita chips, toasted baguette slices, or bread sticks.
Instructions
- Preheat the oven to 350 degrees F. Lightly butter a 2-quart baking dish; set it aside.
- Use an electric mixer to combine the yogurt, cream cheese, green chilies, salt, chili powder, cumin, and garlic powder in a large bowl until well blended. Fold in 1 cup of the cheddar cheese and the chicken to incorporate. Transfer the mixture to the prepared baking dish, leveling it with a spoon. Sprinkle the remaining cheese over top.
- Bake the spread for 35 to 40 minutes, or until heated through and the cheese on top is melted and beginning to brown.
- Serve immediately with crackers, pita chips, toasted baguette slices, or breadsticks.
