Sometimes inspiration strikes when you least expect it. For me, such revelations are rarely subtle–more like I get clobbered over the head with an idea that I can’t believe had never come to mind before. At which point, I usually smack myself upside the head and shriek, “Of course! WHY DIDN’T I THINK OF THAT BEFORE?” All of which results in a lot of inadvertent drama head trauma. And maybe perhaps causes my family to look at me suspiciously while laughing and shaking their heads in disbelief.
You think they’d be used to how I operate by now.
When inspiration strikes, I just have to roll with it and take action! In most situations, the end result is worth far more than the inevitable odd looks and teasing that I receive from my family.
Take this Watermelon Cucumber Salad, for instance!
I was elbow deep in the throes of getting the inaugural dinner prepped to break in Bacon Slayer’s new grill. I was staring at a watermelon, gearing up to slice it into monster wedges to serve alongside dinner when it hit me. I’ve seen watermelon salads with feta and drizzled with balsamic vinegar for eons. While the idea of salty feta cheese mixed with sweet watermelon is intriguing, the balsamic always struck me as a tad overbearing an addition to such mild, fresh flavors.
I decided to blend our first bites of watermelon of the season with cool cucumber, the salty bite of feta cheese, bright and tangy lime juice, freshly cracked pepper, and cool mint to create this refreshing Watermelon Cucumber Salad.
Watermelon cucumber salad is so fresh, and simple to make!
It’s an easy, tasty dish to serve alongside a really great burger, picnic sandwiches, or even on it’s own.

Ingredients
- 4 C. fresh seedless watermelon, peeled and cubed
- 1 ½ C. seedless cucumber, washed, quartered, and thinly sliced
- ½ C. feta cheese, coarsely crumbled (or more, to taste)
- 2 tsp. fresh lime juice
- 1/8 tsp. freshly cracked black pepper (or more, to taste)
- 1 ½ Tbs. fresh mint leaves, minced
Instructions
- Gently stir the cubed watermelon, cucumber, and feta in a large bowl with a wooden spoon to combine. Squeeze the fresh lime juice over the salad, and then dust it with freshly cracked pepper.
- Give the salad another quick toss with the wooden spoon to incorporate the lime and pepper. Sprinkle the freshly minced mint leaves over top before serving.
Notes
Watermelon Cucumber Salad is best enjoyed well chilled, within two hours of being prepared. The fruit will continue to release juice as it sits, causing the salad to become soggy over time. The recipe is easily doubled or tripled to feed a crowd.
