Today was the First Day of School at our house. The Sons were so ready to start school that they were up before the sun, eager to absorb all the knowledge that a nerdy mom/teacher and a shiny, new stack of curriculum can offer.
Ever since my boys started school, the beginning of the school year gets them excited-excited-excited! They’re excited to dive into all the new books and pencils. They’re excited for all the new “fidgets” to play with during Read Aloud times.
Excited…right until we actually delve into the new material, at which point a few of the Sons freak out a bit. Because everything is just so new and so different. Tears are usually involved, which completely breaks my heart. Every. Single. Time.
I get it. I was that kid, super excited to go back to school to learn cool new things, but would come home and melt down because I didn’t yet know it all on the first day. Of course, I didn’t know it all! It was the first day! That logic didn’t quell the initial anxious feeling of diving into uncharted territory! However, the possibilities of a new school year is one of the greatest things about education–every year brings new opportunities to learn–you just have to be willing to try. Anxiety is temporary. Knowledge is forever.

Knowing that the first day can be a little anxiety-provoking, regardless of the initial excitement, cookies are a First Day of School Mandate. Since I have four boys with differing opinions pertaining to what the ideal cookie should contain, I came up with a recipe that includes all of their loves in a single, stress-relieving treat.*

Ingredients
- 2 C. all-purpose flour
- 1 tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. salt
- 2 tsp. instant espresso powder
- 1 C. unsalted butter, softened
- 1 C. granulated sugar
- ½ C. light brown sugar, packed
- 1 large egg + 1 egg yolk
- 2 tsp. vanilla extract
- 1 C. semi sweet chocolate morsels
- 1 C. caramel bits
- 1 C. mini pretzel twists, crushed into ½ inch pieces
- 1 C. sweetened dried cherries, lightly chopped
- ½ C. old-fashioned rolled oats (not quick cooking or instant oats)
Instructions
- Whisk the all-purpose flour, baking soda, baking powder, salt and instant espresso powder together in a medium bowl to combine; set aside. Instant espresso may sound like a strange addition to a cookie, but it really adds a unique layer of flavor.
- Cream together the butter, granulated and brown sugars with an electric mixer until light and fluffy. Whisk the egg and additional egg yolk together to combine. Swirl the vanilla extract into the eggs, and with the mixer running, slowly drizzle it in until it incorporates with the creamed mixture.
- Gradually add the flour mixture to the buttery ingredients in the bowl, mixing until just combined. I add the dry ingredients in three additions, stirring well between each. Afterward, individually fold each of the bits & bites into the base cookie dough, until each component is distributed throughout the dough. Begin with the chocolate morsels, and then add the caramel bits, followed by the crushed pretzel twists, then the dried cherries, and finishing with the oats. Chill the cookie dough for 30 minutes to allow all of the flavors to meld while the butter firms up a bit.
- While dough is chilling, preheat the oven to 375 degrees F. Line several baking sheets with parchment paper or silicone baking mats.
- Portion chilled cookie dough, 3-inches apart onto prepared baking sheets with a medium-sized (2 oz.) cookie scoop. The cookies are large, so I find it helpful to put fewer balls of dough onto the baking sheets than I would for smaller cookies. Eight cookies per half sheet pan works well.
- Bake for 10 to 12 minutes, or until the edges of the cookies are golden brown, and centers are just set. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Cookies store well in an airtight container at room temperature for up to 5 days.
Notes
Chilling the cookie dough prior to baking is essential to the results—please don’t skip this step. Also, resting the cookies on the baking sheets when fresh from the oven will give the caramel time to firm up a bit, thus making it easier to remove the cookies without tearing them. < /br> Prep Time: 30 minutes, Inactive Prep Time: 30 minutes, Cook Time: 9 minutes per batch, Total Time: 78 minutes
