I can’t find the specific spice you listed in your recipient for the Cajun Alfredo chicken. You said to use Paul Prudhommes Cajun Blackening Spice, but I don’t see that on his website. Can you please let me know the exact name of the spice you use. Thanks!
Hi Kristin! I use Paul Prudhomme’s Blackened Steak Magic Seasoning Blend. http://www.chefpaul.com/site.php?pageID=365&iteminfo=1&productID=9 Several readers have substituted Cajun or Creole seasoning blends with good success, when they we unable to source the brand that I used in developing the recipe. If you must substitute with a different seasoning, I’d caution you to watch the overall sodium content in the blend that you choose. Paul Prudhomme’s has 80 mg. sodium per 1/4 tsp., whereas I have another brand that I use quite frequently that contains 350 mg. sodium per 1/4 tsp.
